Small changes, big improvements
If you’re new to brewing better coffee, don’t worry — you don’t need to know everything at once. A few simple habits can dramatically improve your cup.

1. Start With Fresh Coffee
Coffee will always taste best when it is freshly roasted. However if stored correctly in sealed containers, or like our sealed bags it will maintain its freshess for several months before the flavour begins to flatten.
- Buy smaller amounts more often
- Store beans in an airtight container
- Avoid keeping coffee in the fridge or freezer
2. Grind Just Before Brewing (If You Can)
Pre-ground coffee is convenient, but grinding fresh makes a noticeable difference.
- More aroma
- More flavour
- Better consistency
If you don’t have a grinder yet, choose the grind that matches your brew method.
3. Use the Right Water
Coffee is mostly water, so water quality matters.
- Use fresh, cold water
- Filtered water is best
- Avoid distilled water — it extracts poorly
4. Get the Ratio Right
A good starting point for most brew methods:
- 1 gram of coffee to 15–17 grams of water
You don’t need to be obsessive — just consistent. A small kitchen scale helps a lot.
5. Mind the Temperature
Water that’s too hot can burn coffee; too cool won’t extract enough flavour.
- Ideal brewing temperature: 92–96°C
- If boiling, let the kettle rest for 30 seconds before pouring
6. Clean Your Equipment
Old coffee oils go rancid and ruin flavour.
- Rinse brewers after every use
- Deep clean weekly if brewing daily
Clean gear = clean taste.
7. Taste and Adjust
If your coffee tastes:
- Sour → grind finer or brew longer
- Bitter → grind coarser or brew shorter
- Flat → try fresher beans or adjust ratio
